. And when we eat well, we feel more energized, clear, and ready to take action on the work that’s meaningful to us. Now, I can’t give a recipe without giving a little back-story. My background includes a diploma as a Registered Holistic Nutritionist (R.H.N.). Although I left nutritional consulting as my career focus behind several years ago, I still see nutrition as a vital ingredient to living a happy life. What we eat affects us on every level. I feel it’s only fair to share my opinion based on my background in nutrition: I do not think that gluten-free is necessarily healthier. I think some people feel better when they choose gluten-free, and some people (like me) have been diagnosed with Celiac disease. When my M.D. told me the biopsy came back indicating I was Celiac, I was seriously bummed. I always loved baking healthy treats and now I would have to learn and explore the gluten-free landscape. What I discovered (to my dismay) is that most gluten-free products on the shelves are low (or completely lacking) in fiber and high in sugar and sometimes ridiculously high in fat. (I do believe good fats are important to a healthy diet but we still need to be mindful of quantity and the type of fat we’re eating.) Fiber is paramount to a healthy diet, and the more I searched, the harder it seemed to find gluten-free products with a good fiber content. This is why I say gluten-free is not synonymous with healthy. Obviously, if you are Celiac or feel sick after eating gluten-containing foods then choose gluten free, but don’t be misled and think that gluten-free equals healthy. If you do have Celiac disease make sure that you are getting enough fiber (25-35 grams a day) via fruits, vegetables, beans, and any high-fiber gluten-free products that you can find. Silver Hills gluten free bread does a great job at this. If you feel wonderful eating gluten-containing flours such as spelt, kamut, or organic whole wheat, please feel free to swap the flour I mention in the recipe below. I love experimenting with things, and when I throw things in a bowl I’m never sure if it will turn it well. This one turned out so well, I knew I had to share it. I also like to stress: give yourself the freedom to get creative and swap some ingredients around if you like. Okay, here it is: 1 organic apple 2 organic carrots 2 free range eggs 3/4 cup Bob’s Red Mill All Purpose Flour (this is gluten free flour) 1 tsp. of Bob’s Red Mill gluten free baking powder 1/4 – 1/3 cup real peanut butter (this means the only ingredients are peanuts and maybe salt. I use the Whole Foods 365 brand or Nuts to You Nut Butter brand. If you are sensitive to peanuts you can use any other nut butter such as cashew or almond butter and it will still taste great!) 2 Tbsp. coconut oil (optional) 1/4 cup unsweetened almond milk 1/8 cup coconut sugar ( you can replace for any sweetener of your choice) handful of raisins handful of flaxseeds handful of chocolate chips (optional, but delicious!) dash of cinnamon Preheat the over to 375 F First, grate the apple and carrots. Then mix in all the other wet ingredients.

Then add the dry ingredients. Stir it all.

Then, place in a lightly oiled pan. (I recommend using olive oil that comes in a dark bottle. Using high quality oils is very important to your health!) Bake for 30-40 minutes. Simply stick a knife in it to see if it comes out clean. Every oven is different and timing may vary. Let it cool. Enjoy! Makes 8 servings. As you can see this recipe is made with fruits and veggies, high-quality fats, and is extremely low in refined sugars. It makes for a great treat or fun breakfast.
